The vineyards are situated at 300 meters above sea level.
Soft crushing, followed immediately by a pressing with low pressure, for extracting during the first phases of the pressing’s cicle, “the free – run” must, that has the best oenological characteristics and in the final phase there is the “pressed must”, vinified aside. The refrigerated must is filtered with perlite's filters and is kept in a cell with a controlled temperature of 31ºF. This first phase of the process, that happens during the harvest’s period, lets us to have a must with the alcoholic graduation of 0% vol. that can ferment a second time to obtain the Moscato d’Asti or the Asti DOCG. The secondary fermentation happens in wine vats, that can keep thermo controlled over pressure until 6 bars. The must taken from the cold stores is heated to 64ºF and it is inoculated with selected yeasts that must ferment the sugars to obtain the quantity of alcohol desired, that for the Moscato is 5% vol. During the fermentation, the carbon dioxide develops and gives the typical perlage to the wines.
