The vineyard is situated just above the famous Italy boot on the Adriatic Sea, in Andria, Puglia Region. It has been operated as Biodynamic since 1988, Demeter certified in 2011.
The time of the grape harvest is determined by chemical physical analysis. The most important thing is the sensory evaluation of the grapes. Soft pressing and fermentation at controlled temperature (25-26°C), pumping over and delestage technique. Maceration on the skins for 20- 25 days.
The soil is primarily composed of calcareous rock.
- Training system:
The training system is of rearing, spurred cordon or guyot, depending on the grapes.
- Tasting Notes:
Deep purple color. Aromas and flavors of berry chutney, beet salad, fig, leather, and carnation with a slightly chewy, vibrant, dry medium-full body and a polished, medium-long tar and fertile earth finish with firm tannins and moderate oak.
