Natural Merchants olives maintain traditional flavors, keeping the way our Spanish ancestors prepared olives. The olives are picked by hand and placed in vats, with water and marine salt.
In these vats the process of lactic fermentation dilutes oleuropeinic acid until it disappears. This process lasts eight months. After that they are hand selected and placed in jars where they are pasteurized.
This results in very flavorful organic olives.
Available: green olives, cracked olives (with or without herbs and spices) and “black organic olives” in brine.
