Vinification: very gentle pressing so that the red color is slightly extracted, cool 1st ferment with temperature control, 2nd fermentation in stainless steel tank, cooling, natural CO2 and sugar

Analytical Data: 11%vol alc, 20g/l residual sugar, 7.2g/l acidity

Ageing: ageing only in stainless steel, early bottling to retain the freshness and fruitiness
